 Introducing THE PIG-in the Cotswolds Team!

Our newest member of the litter, THE PIG-in the Cotswolds, is almost here and we couldn’t be more excited to welcome you on inside. So you feel extra at home when you pop to see us, why not get to know some of the team working hard behind the scenes? If you are a regular PIG visitor you may see a few familiar faces across our senior team; many have been part of the PIG family for years, and we’ve got some exciting new additions too.

 

Meet the Team...

 

Sophie Perry - Hotel Director

Heading up our newest PIG is Sophie, who is not only a long-timer piggy person, but a dedicated and inspiring leader in hospitality.

“After a fair few years of globetrotting and gaining invaluable experience, I moved back to the UK and have since focused on building a career within the hospitality industry. In my time I have been a wedding and events manager for a large-scale hotel, a chef, operations manager for a small chain of bars and gastro pubs, owned my own café and before THE PIG, was General Manager for Jamie Oliver’s Fifteen.

“After Fifteen closed unexpectedly just before Christmas in 2019, I was fortunately offered the role as Bar Manager at THE PIG-at Harlyn Bay. We opened the hotel in July, and I was promoted to Food & Beverage Manager in October of the same year. In January 2021, I was offered the opportunity to move to THE PIG-at Combe as Deputy General Manager which is where I was based until I moved to THE PIG-in the Cotswolds in February of this year as Hotel Director.

“I am known for my optimism, big-picture thinking, reliability and perhaps my sense of humour…? I have an energetic approach and a genuine passion for developing others. I am committed to fostering a positive and supportive team.”

 

Gareth Rees - Deputy General Manager

Supporting Sophie is Gareth, who is a new face to THE PIGs but someone who loves all things hospitality!

“I was lucky enough to start my hospitality career in a café called West on Porthmeor Beach in St Ives, where I grew up. I fell in love with hospitality and went on to study International Hospitality Management at Cardiff Met University. After my time at Cardiff Met, I began my role as a Graduate Manager at The Manor House Hotel in Castle Combe in September 2019.

“After a wonderful 7 months, COVID-19 threw a spanner in the works of my grad scheme with hospitality grinding to an abrupt halt. As we opened and then closed again and opened and then closed again, I was promoted to Assistant Guest Services Manager, looking after the reception and concierge function of the hotel.

“During my time as Guest Services Manager, I studied for a level 3 leadership and management diploma through the Master Innholders Aspiring Leadership Diploma. It was during this time that I met two lovely people from THE PIG Hotels, I was wowed by what they told me about the group and the amazing hospitality that THE PIGs offer.

“After 2 years in Guest Services, I returned to my foundations and became Food and Beverage Manager at The Manor House, I am incredibly proud to say that a large amount of what I achieved in this role led to me being awarded an Acorn Award in June 2024.

“I loved my time at The Manor House but when I saw the role of Deputy General Manager become available at The Pig in The Cotswolds, I couldn’t not apply. I am incredibly excited to join you all as we open what will be an amazing hotel!"

 

Will Parkes – Head Chef

Will is the man behind the kitchen brigade creating our 25 mile menus over in the Cotswolds.

“I started working in a pub kitchen when I was 15, whilst still at school. When I left school, I went to catering college for one year. I joined THE PIG in the New Forest in 2016 as a Chef de Partie and was part of the opening team at THE PIG-at Bridge Place where I progressed to Senior Sous Chef. During my time there, I entered Professional MasterChef and made it to the quarter finals!”

 

Ed Osborne - Hotel Beverage Director

Another familiar face you may have come across behind the bars and pouring wines over in Somerset!

Ed has joined us at THE PIG-in the Cotswolds after 9 years at THE PIG-near Bath. Joining THE PIG back in 2015, he has been involved in all things wine, acting as our “Head of Wine”, training and developing our passionate Sommeliers to the highest of levels. Certified with a WSET Level 4 Diploma and considering the Master Of Wine certification... Ed’s experience, knowledge and passion has no boundaries!

 

Jonny Golder - Restaurant Manager

If you’re digging in with us, you may come across Jonny on the restaurant floor!

“I have been with THE PIG for a few years across 2 different sites before the Cotswolds –  THE PIG-in the South Downs and THE PIG-at Combe in the role of Assistant Restaurant Manager. Alongside my experience at THE PIGs I also have had the valuable experience of running my own Events Company and Coffee Shop.”

 

Lily Rosier - Fieldhouse Manager

Helping us over in our Fieldhouse to bring treatments and wellbeing to the heart of the Cotswolds countryside, is Lily!

“I have worked for The Pig company for over 5 years, starting as a restaurant host when I was just 19. I went on to become a Therapist in the Potting Shed treatment rooms at THE PIG-at Combe and this is when I knew I had found my career pathway. I quickly became a Senior Therapist followed by a Head Therapist and am now super excited to be opening our new Fieldhouse."

 

Sam Russell - Hotel Administrator

Behind the scenes working very hard is our friendly Hotel Administrator, Sam!

“I am originally from Devon and moved to the Cotswolds and started working here in January 2019. I started as Receptionist, progressing to Duty Manager, Reception Manager and Reservations Administrator, before starting my new role as Hotel Administrator when we re-opened as THE PIG-in the Cotswolds in June 2024. The hotel and gardens are very special places to me; I was luckily enough to call them ‘home’ during the three lockdowns. We are a very friendly bunch here!”

 

Nicole Rover - Events Manager & Duty Manager

Keeping on top of all things events is Nicole!

“I am Nicole, THE PIG-in the Cotswolds and The Village Pub Events Manager and Duty Manager. I have been working here since I moved to the UK from a small village in the Venetian countryside.

“I started in housekeeping in 2016 and then worked in reception, restaurant, as an Assistant Manager at the pub and finally began my career in Events as Events Assistant in 2021.

“I love food and my crazy little spaniel Milo!”

 

Sarah Jones - Duty Manager

Another familiar face you’ll see on out and about the hotel is Sarah, our Duty Manager.

“I moved from the north west back in May 2016 and started working at the pub. During my eight years here, I’ve worked in most departments before becoming Duty Manager in 2021. During the refurbishment period, I spent time at THE PIG-at Harlyn Bay, THE PIG-near Bath and THE PIG-in the South Downs. I’m a massive sports fan, especially NFL, and love a comedy gig or two!”

 

Jasmine Tritton - Reception Manager

When you’re checking in, you may be greeted by the friendly Jasmine!

“I was lucky enough to join the PIG family at the opening of THE PIG-at Bridge Place over 5 years ago as a Receptionist, and worked my way up to Head Receptionist in 2021 before becoming Reception Manger in 2022.

“I have worked in a number of different jobs before this, including cabin crew and palliative care. My main passions outside of work are running and finding the best places to eat and drink. I have only recently moved to The Cotswolds, so I am looking forward to exploring this new area and welcome any recommendations!”

 

Andy Moore - Head Kitchen Gardener

At the heart of each PIG are our Kitchen Gardens, and Andy will be caring for our newest patch in the Cotswolds.

“I started as a Groundsman at THE PIG-on the beach before becoming the Head Kitchen Gardener. I moved to THE PIG-at Harlyn Bay where my team and I built the Kitchen Garden, before relocation to THE PIG-in the Cotswolds in May. My passion is growing vegetables organically with a low carbon footprint, minimal impact on the environment… and shouting at pigeons! My hobbies are reading, fixing things and throwing darts at pub walls.”

 

Jen Danbury - Head Gardener

Alongside Andy, we have Jen who will be getting busy in the veg beds and polytunnels!

“I’ve always had a passion for agriculture and studied conservation management at Agricultural College in Berkshire after finishing school. Once I completed this, I progressed to a Higher National Diploma in Countryside Recreation in Devon at Bicton College.

“After leaving college I worked as a gardener on a private estate in Buckinghamshire before returning to Devon to work in commercial grounds, and then to the flower beds and parks of Sidmouth for local Authority. A few years later I moved to Gloucestershire, and worked at Highgrove House, for the then Prince of Wales.

“Following five years at Highgrove, I became Deputy Head at Barnsley, and  two years later became Head Gardener. I’ve worked here for nearly 9 years now, and the garden continues to hold my interest with its tremendous range of plants and much-loved design.”

 

Jimmy Wright - Maintenance Manager

Keeping the ship in good shape is our Maintenance Manager, Jimmy.

“I’m Jimmy and I love fixing things and being outside (regardless of the weather). I’ve launched nightclubs in the past and installed bathrooms for around 15 years. My specialities include bathrooms, silicone, tiling and plumbing – so if something is wet and it shouldn’t be, I’m your man!”

 

And just across the road you’ll find Luis Davila – The Village Pub Landlord

“I’m Luis, The Village Pub Landlord, originally from Bristol with my parents owning a pub for nearly 20 years just outside of Bath. I have been with THE PIG for just over 8 years and have worked at Bath, Combe, Portetta (when we used to have a sister hotel in the French Alps), Bridge, Harlyn and now the Cotswolds.

“I have been lucky enough to work in  almost all departments across  THE PIGs and, most recently, step into our very first pub as The Village Pub Landlord. I enjoy spending my free time watching rugby and finding new and exciting places to eat & drink!”
