A proud moment for us, Chef Director James Golding appeared on Channel 4’s Sunday Brunch on 25th August attracting a mega audience of 558,000! James discussed all things PIG and showed presenters Tim and Simon how to cook our famous Brock Eggs using one of the delicious recipes from our new Pig Book! Our PIG book does not only contain recipes, it includes interior design tips, cocktail recipes, kitchen garden tips and all of the things that go with our Piggy lifestyle.
Discussions focused on THE PIG’s journey, ethos and philosophy. As many of you will already know, we love using local producers that create our 25- mile menu. There is no better feeling than working with passionate local producers that love their produce and love us using it. At each PIG hotel there are a group of local suppliers that make up the 25- mile menu, 80% of our produce comes from 25 miles or less which is really important to us.
James also discussed the infamous Kitchen Gardens…
‘It is all about seasonality, it’s so important to us’
‘Everything that can be grown in our garden is put to use! At this time of the year 75% of what is growing in the garden is being used. Our menus change daily based on what is growing in the garden at the time, our chefs make the most of everything and there is always a use for every item. One of the interesting ingredients from the Garden featured on the show was the grapefruit mint! This is just one of the many intriguing ingredients that are grown in the Kitchen Garden.’ - James G
