Notes from the kitchen table with Tom Sobey, Founder of Origin Coffee – our new coffee partner across THE PIGs!

We like to take the time to slow down and savour the good stuff round at our place, starting with a really, really great cup of coffee. That’s where our good friends at Origin Coffee come in – at the B Corp certified speciality coffee roaster, they take their responsibility to people and planet as seriously as we do.

From 2025, our baristas are proudly pouring fresh cups of Origin’s newly launched Sail Ship coffee in our restaurants across THE PIGs. We caught up with Founder, Tom, to learn more about Sail Ship and the story behind their perfect blend…

It’s great to meet you, Tom! We’re big fans of Origin Coffee at THE PIG – what makes it unique?

Origin was founded in 2004 with the idea of becoming Cornwall’s first speciality coffee roaster. I have always been committed to an ethos of quality, sustainability and education; working directly with coffee producers to source exceptional, traceable coffees and educating baristas to brew them in the manner they deserve.

We all strive for excellence across everything we do here. From our close relationships with farmers and producers at source, to meticulous roasting and brewing practices here in the UK, we aim to create coffee experiences that are as memorable and sustainable as possible.

Your first coffee shops opened in 2015 (one in Porthleven, Cornwall, followed by another in East London) how did you manage to bring the culture of Cornwall into the city?

Our focus has always been to deliver exceptional coffee and service in an approachable way. When we opened in Shoreditch, our manager came from Cornwall and was someone I had personally worked with before. 

I knew they would be able to bring the level of quality and service we needed to our London flagship, and we very quickly established a great reputation for exceptional coffee and service. We’re really proud to be celebrating 10 years in our Shoreditch Cafe this year.

As a fellow B Corp, we love that being a force for good is so important to you. How is Origin Coffee working to be better for people and planet?

Our sourcing principles are guided by more than just incredible coffee, it’s also about looking for ways to invest in the people behind the product and bring value to the supply chain beyond just the exchange of money. 

We believe it's important to hold ourselves to account for this and that's why we work with independent organisations such as Enveritas. 

They help us to identify opportunities to constantly improve the way we work with producers out at origin – helping us to tread more lightly; both socially and environmentally.

Can you tell us the story behind your Sail Ship coffee?

Our Sail Ship coffee is part of a ‘Fresh Coffee, Clean Ocean’ initiative curated by our sourcing partners. It’s designed to address the carbon emissions associated with traditional coffee transportation – and so, for the first time ever, we have been able to ship our coffee by sail across the Atlantic Ocean. 

As a business, we’re always looking for innovative ways to reduce the impact of our products, and by supporting initiatives like ‘Fresh Coffee, Clean Ocean’, we can offer our community the same high-quality, consciously sourced speciality coffee with a lower environmental footprint.

The Sail Ship coffee brings together the finest varieties of the Menezes Ribeiro family farm in Brazil. The farm’s geographical location is ideal for quality coffee production, and low-impact natural processing results in a sweet and balanced coffee – you can expect creamy and moreish notes of milk chocolate and Brazil nut in the final cup. 

We serve it three ways: roasted for espresso brewing, filter brewing, and in convenient capsules for pod machines.

What do you think makes Origin and THE PIG work so well together?

I think both of us really champion and celebrate quality and provenance. We are united by our aspiration to deliver incredible products and great service to our customers and guests, and our shared ethos of sustainability, community, and excellence is what makes our partnership so great.
